Elizabeth was born in Preston, New Jersey, on 6th September 1962. Her father’s name is Rafael Vargas, who is a United States Army Colonel, and her mother’s name is Anne Vargas, who is a housewife. Her majority of Childhood was spent in moving from post to post in Germany and Belgium. Later, Elizabeth graduated with a bachelor’s degree in journalism from Columbia’s University of Missouri. There she made her first debut broadcast as a reporter/ anchor for the NBC affiliate, KOMU-TV.

Elizabeth married the famous singer-songwriter, Marc Cohn, on July 20, 2002. Then she became the mother of two sons and two stepchildren from Cohn’s first marriage. But their marriage was broken after 12 years of being together, and a significant reason for this was said to be her alcoholism.
